A Trip To Washington










So Dave was going to surprise Natalie with a trip to Washington last weekend. The plan was, that they were going to leave Wednesday night & come home Sunday night. I gave a note to her teacher letting her know that Natalie will be out of town Thursday & Friday. Well, Natalie came home from school Wednesday & she gave me a birthday invitation for a kid in her class, it was on Saturday. We told her that she was going on a trip with Dave, she didn't want to go, she wanted to go to the birthday party. So we finally told her where she was going & she still didn't want to go. So Dave called his mom to let her know that there has been a change of plans, Ashley was going in Natalie's place. So I unpacked Natalie & packed for Ashley instead. About 15 minutes later Natalie came in & told us that she did want to go now. So I unpacked Ashley & repacked for Natalie.







I guess Natalie had a great time in Washington. She played every minute she could with her cousin Breeanna. She & Breeanna had matching outfits, so they were twins for a day! She went to Chuck E. Cheese & had the best salsa that G-pa Anderson made. Thank you Dave for taking her!! Thank you Kara for entertaining Natalie & Breeanna!! Thank you Jerry & Connie for letting Dave & Natalie crash at your place!! Oh, Natalie won't eat any other salsa, so can I get the recipe please?!?

It was so nice to have Natalie for a few days - sure enjoyed the time together and an excuse to make salsa. She was perfect - Dave we tolerated. Hope all can make it next time. Pops
Salsa:Basic Recipe:
3-4 Ripe Medium Size Roma Tomatoes – or other tomato in season
1/2 Medium Lemon use juice only – or 2 teaspoons bottled juice
1 -2 Teaspoon of Cilantro - leaves only no stalks (I say teaspoon but I just pinch a bunch off – some days more than others)
1/2 Teaspoon Garlic Salt or just salt and a garlic bud
1/4 - 1/3 Medium Green Pepper, no seeds or white part
1/4 Medium Sweet, yellow or red Onion – or some of each
1/2 to 3 Jalapeno Peppers, cut stems off - How hot do you like it? Mild has 1/2, hot has 3. For flavor with less fire take the seeds out of the Jalapenos.

I use a pulsing food processor but a blender will work. Blend all ingredients but tomatoes to a course blend – not too finely chopped.
Add tomatoes and pulse blend to a coarse medium to medium mixture per taste.
I always try to have all the vegetables at room temperature if serving immediately.

The amazing thing about this recipe is that sometimes I will use yellow or orange peppers or a regular onion or different types of hot peppers - Serrano, Habanera, Ancho, etc., each variation gives it a different flavor and all pretty good. Lime juice with the lemon juice gives it a little more zip. I like this salsa as a finish for grilled fish or on french bread with olive oil and mizithra cheese warmed under the broiler. And of course - the main course - Chips and Salsa!
